Vegetable soup with melted cheese and meatballs: delicious, filling and simple

And it does not matter at all that it is warm outside the window. For me, soup is the foundation of a meal. And if there are now a lot of the most delicious and fresh vegetables, I cook soup with them.

And to make it more complete, I also invited meatballs to the company.

Vegetable soup with melted cheese and meatballs

Servings – 6, it will take about 1 hour.

Products needed:

  • 3 potatoes;
  • 1 carrot;
  • 1 onion;
  • 2 cloves of garlic;
  • ¼ cabbage;
  • 1 zucchini;
  • 1 handful of green beans;
  • 2 liters of water;
  • 2 bay leaves;
  • 500 g minced pork;
  • 1 egg;
  • 1st century sh. dried herbs;
  • salt to taste;
  • black pepper to taste;
  • oil for frying if necessary;
  • 3 years sh. melted cheese;
  • A bunch of dill.

How to do it

We cut the potatoes into cubes, the cabbage into slices and add them to the pot. Pour water, add bay leaves, a pinch of black pepper, salt and heat the pot to boil.

Onions and garlic (save some garlic for the season of minced meat), cut carrots into slices, and grate zucchini.

Heat oil in a pan. Add onion and garlic. Fry until the wonderful aroma spreads. Then we add carrots and zucchini. Fry for a few minutes, put the vegetables in the soup.

Season the pork with salt, pepper, chopped garlic and green vegetables, add eggs. We mix the mass well. We form balls and put them in boiling soup. We also add peas.

We cook for 15-20 minutes. Add melted cheese and chopped dill. Heat until boiling.

Pour into a bowl and enjoy.
