Children and adults love soup with soft minced meat balls. This soup is delicious and quick to prepare, so it’s perfect for a weekday dinner.
Fresh and frozen vegetables are suitable for preparing this soup.
Broccoli and cauliflower soup with meatballs
You will need:
- 200 g minced turkey (or other meat),
- some cauliflower,
- some broccoli florets,
- 1 carrot,
- 1 onion,
- 2 small potatoes,
- a handful of frozen peas
- 2 cloves of garlic,
- greeting card,
- salt, pepper.
How to do it
Grate the onion, squeeze the juice. Beat the eggs. Mix the minced meat, grated onion, half the beaten egg, spices, add salt and pepper and knead well.
Form into small balls. You can fry it before cooking, but you can throw it directly into the boiling soup.
Cut the shaved potatoes into cubes, carrots into slices, pour cold water and boil. When it boils, add the dumplings, add salt and cook until the potatoes are cooked.
Divide the broccoli and cauliflower into florets, cut them and add them to the soup, cook for 5 minutes (if you use frozen vegetables, cook for a few more minutes).
Finally, peel the peas, add the bay leaves, greens, and chopped garlic. Turn off the heat and let the soup stand for 5-10 minutes.
