Cucumber has a unique taste, is good for health, but it is an overlooked vegetable. And quite unnecessary. Cucumbers can be used universally in the kitchen: flavoring stews, soups, frying pancakes, canning. This vegetable with an incredible taste is also famous in sunny Italy. Vaida Budrienė, head of communication at the shopping chain “Iki”, said that although traditional vegetables remain the most popular, buyers are also choosing more sophisticated items.
It is characterized by an abundance of good qualities
“Although traditional vegetables: potatoes, carrots, cabbage are still favorites among Lithuanians, we notice that buyers prefer to experiment. And especially in autumn, pumpkins, celery stalks, and pumpkins, which can also be found in our store , will be in the basket,” said V. Budrienė.
Jolanta Sabaitienė, an employee of the fruit and vegetable department of the shopping chain “This”, said that cucumber is a representative of the pumpkin vegetable family.
“Cucumber looks like a hybrid of zucchini and cucumber. You should include this vegetable in your diet, because it has good health benefits. Cucumber contains vitamins A and C, potassium, calcium, iron, magnesium and other useful substances. In addition, it contains very few calories,” said J. Sabaitienė.
An employee of the fruit and vegetable department “This” said that cucumbers come from Italy, so it is not surprising that this vegetable is very popular in the country. Cucumbers are usually quite short, elongated or round. They are usually green, white or yellow in color and grow up to 2-4 kilograms.
How do Italians eat?
Cucumbers are famous in Italy. And despite the variety, Italians love it Barttier a type of cucumber. This cucumber looks like a green melon, and tastes like a mixture of melon and cucumber. This type of pumpkin is commonly grown in southern Italy and Tunisia. In Italy, this vegetable is preferred unripe. They are eaten alone as a snack. Due to its smooth and slightly sweet taste, agurota is also often used in salads and pasta dishes.
“Because Barttier cucumbers have a very fresh taste, in Italy they are often used for salads. They can be easily made at home. All you need is your favorite lettuce, tomatoes, cucumbers, onion leaves, sundried tomatoes, mozzarella. All ingredients are chopped and mixed in a large bowl. The salad can be seasoned with olive oil and high-quality balsamic vinegar dressing,” said J. Sabaitienė.
Pasta is also seasoned with cucumber, especially in southern Italy, where it is a very popular dish. You only need a few ingredients to make pasta with gherkins: spaghetti, butter, gherkins, tomato paste, parmesan cheese, cream and lemon juice. First, the pasta is boiled, then the cucumber is fried in butter. When the cucumber is cooked, season it with salt and pepper. Finally, in the same pan, pour a spoonful of the pasta-cooked water on the cucumber, spaghetti, tomato paste, lemon juice, and cream. Everything is sautéed and served with grated parmesan.
