Lasagna soup that the whole family loves

I try to eat different foods, more vegetables and, of course, soups. He was always at my house every day. Sometimes a bowl of soup is a serious second meal.

This lasagna soup is a family favorite because it has a flavor for everyone. So when it’s raining outside, for me, soup is really a comfort food.

Lasagna soup

Products needed:

  • 1 tablespoon of olive oil
  • 1 large onion chopped
  • 4 cloves of garlic
  • 400 g fresh homemade sausage (you can use your favorite minced meat)
  • 2 liters of chicken broth
  • 2 cans of chopped tomatoes in their own juice
  • 1 teaspoon ground oregano
  • 2-3 teaspoons of chopped basil (you can add less if you don’t like it too much)
  • 8 sheets of uncooked lasagna noodles
  • 150 g of grated hard cheese
  • salt and pepper to taste

How to do it

In a large pot where you will make the soup, heat the oil and fry the chopped onion. After frying for 2-3 minutes, add the chopped garlic and fry for another minute.

Add the peeled sausage (or minced meat) and cut into small pieces with a wooden spatula. Bake until soft.

Pour the broth, canned tomatoes with all the liquid into the pot and stir well. Add oregano, basil, salt and pepper. Bring to a slow boil and add the broken pasta. Cook for 8-10 minutes until the pasta is tender.

Add hard cheese and pour into a bowl.
