  • 500 g of pork ribs (preferably smoked);
  • 1 large onion, chopped;
  • 2 carrots, cut into cubes or slices;
  • 3 potatoes, cut into large cubes;
  • 1 glass of dry peas, soaked in water overnight;
  • 0.5 cups of pearl barley, soaked in water overnight;
  • 2 teaspoons. spoon of oil;
  • 2 bay leaves;
  • 2-3 ground pepper peas;
  • 0.5 tea. spoon of salt;
  • a large pinch of black pepper;
  • a handful of flat-leaf parsley, chopped;
  • 2 liters of water.

Record: if you have it and like it, you can also add dried boletus to this soup (in that case, soak it in water for a few hours beforehand).


1. In a large, heavy-bottomed pan, heat the oil over medium heat, add the onions and stir until translucent.

2. Put the ribs in the pot and fry them with onions until they are covered with a crust.

3. Wash and drain the peas and pearl barley that have been soaked overnight.

4. Add the carrots to the pot next to the onions and meat. Fry for a few more minutes until hot. Add salt, pepper – black and fragrant, add bay leaves. Fill everything with water and wait until it boils. Then add semolina and peas. Reduce the heat and cook for 20 minutes. After this time, add the potato cubes and taste to see if there is a lack of spices. Cook for another 10-15 minutes. or until potatoes, grits and peas are cooked.

5. When serving, put a couple of ribs on a plate, pour soup, sprinkle with parsley, if you want, add sour cream.
