Sorrel soup

You will need (for 3-4 servings):

  • 4 small potatoes
  • 1 onion
  • 2 cloves of garlic
  • 80 g of fresh sorrel leaves washed
  • 2 vegetable stock cubes (amount may vary according to the instructions on your stock packet)
  • 1.5 liters of water
  • 1-2 teaspoons of olive oil
  • a handful of fresh parsley
  • a pinch of pepper
  • salt if necessary

How to do it

Boil 1.5 liters of water.

Peel the potatoes and cut into cubes, put in boiling water and boil for 15 minutes. or until soft.

Cut garlic, onion and fry in a pan in olive oil. After frying, put it in a pot with boiling potatoes. Add stock cubes at the same time.

When the potatoes are almost cooked, add the chopped sorrel and pepper to the pot and cook for 5-8 minutes.

If necessary, add more salt.

When the vegetables are cooked, add the chopped parsley.

It can be served with vegetable sour cream, soy milk, but it is also suitable without additives.
