Cold soup “Okroška” according to the Ukrainian recipe has become a real summer discovery

And this summer, when I was in contact with my cousin who lives in Kharkov, I asked him if he eats this popular Slavic soup. Klavdija likes to tell me that “okroshka” is made differently in every house (like our šliboršči, I thought), and in Ukraine the white “okroshka” is made, which is not made with gira, but with whey or sour milk.

The favorite thing in Klavdija’s family home is her father-in-law’s signature cold soup. I learned her recipe, made it and… fell in love. And once again I thought that the strange combination sounded strange only in our heads, so I will try to cook with gira as well.

The last week of summer is very hot, you still want this cold, cold, and really “okroshka” food, so I invite you to try it.

For 6-8 servings you will need:

  • 1 cooked chicken breast
  • 2-3 chicken eggs
  • 2 boiled potatoes
  • 2 small cucumbers
  • 6-8 onion leaves
  • 1 teaspoon sour cream
  • 1 tablespoon of mayonnaise
  • 1.5 liters of whey
  • A bunch of dill
  • salt, pepper

The first time I made this soup, I replaced the sour cream, mayonnaise and whey with 1.5 liters of full-fat kefir. And needless to say, when I dared to try the original recipe, I discovered a different taste.

I cut milk, eggs, cucumbers and potatoes into small cubes, finely chop onions and dill, add a little salt, add ground pepper and mix with sour cream and mayonnaise.

Finally, I pour the whey and put the container in the refrigerator for at least a few hours.

We eat it cold, without additional additives.
