You will need:

  • 200 g of fresh long-fruited cucumbers
  • 100 g of avocado

  • 1 handful of mint leaves
  • 2 v. sh. chopped parsley
  • 1 lemon juice
  • a pinch of salt

Cut the cucumber into slices. Save some cucumber slices and mint leaves for garnish.

Add the avocado, cucumber, garlic, parsley and mint to a blender. Add yogurt and lemon juice, add a pinch of salt and mash everything until smooth.

Pour the resulting mass into a bowl, decorate with cucumber slices and mint leaves. Serve the soup cold.

Gazpacho with cucumber

You will need:

  • 800 g of tomatoes
  • 100 g of onions
  • 2 cloves of garlic
  • 100 g long fruit cucumber
  • 200 g of fresh red pepper

  • 2 v. sh. apple cider vinegar
  • 1st century sh. salt
  • 1/4 century sh. ground pepper

  • 1st century sh. dried oregano
  • 200 g handful of basil leaves

You will need:

  • 1 liter of buttermilk

  • 2 handfuls of spinach
  • 400 g of cottage cheese
  • long fruit cucumber
