Vegetable soup with minced meat and cheese balls

You will need:

  • 3-4 potatoes,
  • 2 tomatoes,
  • 1 onion,
  • 1-2 cloves of garlic,
  • 300 g of various vegetables (I used carrots, parts of cauliflower and frozen peas),
  • 2-3 l broth (depending on the desired thickness of the soup),
  • salt, pepper,
  • greeting card,
  • parsley, dill.

For the meatballs:

  • 300 g of your favorite minced meat with spices

For the cheese balls:

  • 150 g of cheese,
  • 1 small egg,
  • 40 g of butter,
  • about 100 g of flour,
  • dill, salt.

How to prepare

For cheese balls, grate cheese on a fine grater, add eggs, add salt, and mix chopped dill. Then add butter, add flour, knead the dough and make small balls from it.

Pour the broth into the pot, add the bay leaf and bring to a boil. Once it boils, add the meatballs, cook for about 5 minutes, then add the chopped potatoes. When everything boils, fry onions with garlic and tomatoes in a pan. After that, put it in the pot, also add vegetables (if you cook with peas, they should be added at the end of cooking) and cook for a few minutes.

Then add the cheese balls and cook for another 4-5 minutes. Finally, add the peas, chopped greens and spices.

You can season it with sour cream, but it’s also delicious without it.
