“Soup is a favorite food around the world since ancient times. In addition, soup is very suitable for the consumption of seasonal vegetables. You can cook soup easily from vegetables, meat or fish that are in the refrigerator: from beetroot or cabbage soup with meatballs or ribs, until the wonderful soup with coconut milk and seafood”, said V. Juodkazienė.

A few tricks will make the soup tastier

Another favorite type of soup is pureed soup. According to him, residents especially appreciate it because of its soft texture and taste. However, according to experts, in order for pureed soup to surprise with its taste, it is worth knowing some rules.

Caramelize the vegetables. Vegetables will acquire a more pronounced flavor if you cook them in the oven instead of boiling them in water before scrubbing them. According to V. Juokdazienė, various root vegetables – beets, celery, parsnips, sweet potatoes or pumpkins, tomatoes, broccoli, onions – are best sprinkled with olive oil, your favorite spices and fried in an oven heated to 200 degrees. However, it should be remembered that the cooking time of different vegetables is also different. It takes 10-15 minutes to fry tomatoes, about half an hour to cut pumpkin into pieces, and beets or potatoes need more time. If you want to prepare the vegetables faster, you can also fry them in a pan.

Make homemade broth. Although stock cubes are perfect for cooking soups, you will be able to make the best stew if you use homemade stock. According to V. Juodkazienė, in order not to disturb the taste of the stew ingredients, it is better to choose chicken broth, but stew cooked with other meat or fish will also be good. According to food experts, it takes time to cook the broth. It is better to cook from the bones left from meat or fish. The best bones are boiled on low heat for a few hours after seasoning the water with bay leaves, salt, pepper or other favorite spices.

Don’t forget the acid. According to food expert V. Juodkazienė, to improve the taste of the soup, you must not forget to season not only with salt or pepper, but also add a little acid: rice, wine, apple vinegar. If you like the taste of citrus fruits, lemon or lime juice is also perfect. For example, a splash of apple cider vinegar will add flavor to beetroot soup, and a splash of lemon juice goes well with pumpkin soup.

Add toppings to taste. According to V. Juodkazienie, when preparing a pureed soup with an incredible taste, you should not forget about various additives. Slices of toasted bread or fresh herbs: such as basil, which goes well with pureed tomato soup, or parsley and dill, which makes a beetroot soup or pureed cauliflower. And, for example, coriander goes well with pumpkin. In addition, you can enjoy the soup with pieces of grilled pork or cheese – for example, feta or grated parmesan.

Pureed lentils and bean soup with pork

You will need:

  • 100 g of smoked meat
  • 80 g of onions
  • 2 cloves of garlic
  • 60 g of carrots
  • 60 grams of celery
  • 1st century sh. ground red pepper
  • 150 g of canned green beans
  • 200 g of canned lentils
  • 1 l of vegetable broth
  • 1/4 century sh. salt
  • 1/4 century sh. ground black pepper
  • 1 year sh. chopped fresh parsley
  • 1-2 years sh. olive oil
  • 4 slices of your favorite bread

How to do it

Cut the pork into small pieces. Peel and chop vegetables: onions, carrots, celery and garlic. Heat a teaspoon of olive oil in a pan, fry the pork and transfer to a paper towel to absorb excess fat.

Add the onion to the pot with the fat from the pork and fry for a few minutes. Add garlic, carrots, celery, Fry for another few minutes, then add ground pepper, peas and lentils. Pour vegetable broth over everything, reduce heat and cook for 15-20 minutes.
